ABM bread. I've finally given up.... 
  .... using the various programmes. I now use the knead cycle, let it prove to the size I want and then use the bake cycle. Every loaf 100% risen, no more bricks. New loaf, simple sort 
  I got a new loaf going. Nothing extravagant to most of us. 1.25 cups water 1/2 cup sour cream 1 cup grated chedder 4 cups flour 1 egg 2 tb milk powder (recipe called for butter milk powder) 2 TB sugar 1.5 ts salt 2 ts yeast 1 TB dry parsley 1 ts onion powder 1/4 ts fresh grated black pepper Set on dark crust and 2 lb loaf with 'french' setting.... more »

  I was corresponding with one of visitors to my site and we got to working on Rohliky, Czech rolls, using the recipe from Daniel Leader's "Local Breads." Parbaking 
  There was some discussion on parbaking a few weeks back. I just found these directions in Daniel Leader's "Local Breads," page 313-14. The directions are for parbaking Rohlik, small Czech rolls. Remove the rolls from the oven when they have risen and their crusts are set but they are still pale, 10 to 12 minutes. Set the baking sheets on... more »

Looking for butternut squash bread recipe 
  Hello. I'm trying to find a recipe for a whole-grain (or, at least, whole-wheat) butternut squash bread recipe (yeast preferred). The problem is that I'm trying to get one that's in the middle of what I've been finding. Most commonly, the recipes make something more like cakes (e.g., zucchini bread) than breads. Microwaves 
  Istr reading somewhere the suggestion that you can speedily prove a shaped loaf in a microwave prior to baking. It doesn't sound like good practice to me but sometimes I am short of time so I would be interested to know if it works. Does anyone do this? Tim W
