ABM bread. I've finally given up....
|
| |
.... using the various programmes. I now use the knead cycle, let it prove to the size I want and then use the bake cycle. Every loaf 100% risen, no more bricks. I've made some of the best bread so far since I started doing this a week ago. What's the point of letting dough half-rise twice and then knocking it back... more »

Dan Lepard's Flash Loaf
|
| |
From Saturday's Guardian. How do you make crusty bread in less than two hours, from mixing to cooling, without it tasting blah? With lots of yeast, some grated potato, wholemeal flour and a dash of vinegar, that's how. Timing is essential here, so stay with it. 400g strong white flour, plus extra for shaping and dusting... more »

Eliza Acton and Vegetable Bread
|
| |
The English Bread Book by Eliza Acton FP 1859. A facsimile copy of this came through the door in the week. Interesting reading. This is what she has to say about vegetable bread: PARSNEP AND OTHER VEGETABLE BREAD Many vegetables may be used in part for making bread; but it is only in cases of real need that such an expedient is recommended. When corn is... more »

Parbaking
|
| |
There was some discussion on parbaking a few weeks back. I just found these directions in Daniel Leader's "Local Breads," page 313-14. The directions are for parbaking Rohlik, small Czech rolls. Remove the rolls from the oven when they have risen and their crusts are set but they are still pale, 10 to 12 minutes. Set the baking sheets on... more »

Looking for butternut squash bread recipe
|
| |
Hello. I'm trying to find a recipe for a whole-grain (or, at least, whole-wheat) butternut squash bread recipe (yeast preferred). The problem is that I'm trying to get one that's in the middle of what I've been finding. Most commonly, the recipes make something more like cakes (e.g., zucchini bread) than breads. These are generally quickbreads.... more »

Microwaves

Istr reading somewhere the suggestion that you can speedily prove a shaped loaf in a microwave prior to baking. It doesn't sound like good practice to me but sometimes I am short of time so I would be interested to know if it works. Does anyone do this? Tim W

OT - A Candle for Mo - OT
|
| |
4 years ago today, as some of the senior members may remember, my beloved lady Mo died at 9 p.m. As is my custom I will light a candle for Mo at that time and would deem it a kindness if you were to light one too at 9 p.m. your local time. A handful of points of light following the moment of her passing around the World.... more »
